Resumen

Ultrasound has been recognized as a useful technique in the extraction of bioactive compounds from plants. In this case, ultrasound-assisted extraction has been employed for the liberation of antioxidants present in Zingiber officinale. The physical conditions to obtain aqueous extract with antioxidant activity were established in this study. These extracts can be used in the food industry due to the different beneficial properties of this rhizome to human health.
